The term sutukil is a humorous derivation from three Cebuano words: sugba, tuwa, kilaw -- which are three ways of preparing food, particularly seafood like fish.

If we talk about fish, sugba means to broil fish over hot charcoal; tuwa means to cook fish in boiling water together with some spices and seasoning; kilaw means to prepare fish raw but immersing it in very sour vinegar together with spices like onions, garlic and pepper.

Eating places that offer seafood in these three various ways are called sutukil restaurants or carenderias. In Lapulapu City, the most famous place for treating friends to sutukil is the barangay (village) of Mactan (same name as the island), near the boundary of another village, Punta EngaƱo.

The sutukil restaurants in barangay Mactan are just across the memorial circle containing the Magellan shrine and the monument of Lapulapu.

People from all over Metro Cebu and a number of foreign tourists are frequently seen in this place to enjoy the rich variety of seafood available in over a dozen sutukil restaurants clustered here.

thanks peepers for that enlightening post... i have never heard of sutukil, until now.. i'm from the Tagalog region, and boring as it may be, we don't shoot our food. :twisted: (joke!)

My favorite filipino food is kinilaw na tuna. At first, i wasnt sure if it was a good idea to try it. Raw tuna in a salad, i wasnt sure how my stomach would react. biggrin.gif I ended up asking for a second serving! I miss kinilaw na tuna, fruit salad, and Red Horse beer biggrin.gif . About Red Horse, does someone knows the percentage of alcohol in it?

Ms. D, At first i have no idea what lambanog is. yah, me dummie ano! laugh.gif When I later found out that its thesame as TUBA in cebuano, i laugh out loud.

I miss the "sugba and kinilaw" part in SUTUKIL. Its very famous in Cebu. tongue.gif I don't get it, i try to broil some fish one time in the oven with thesame marinade stuff but it doesn't taste thesame as what we have back home. Maybe i should use charcoal next time???

I like white vinegar( while lambanog or tuba in visayan) than orange one, it was more sweeter and tasty when you get in the coconut tree for the first time.

NILAGPANG is kinilaw fish, especially BULINAW or DILIS. The process goes: Remove the head and bones of DILIS, clean thoroughly, marinate at vinegar until it turns real white (which means it's already cook), remove vinegar juice, put new vinegar, add ginger, onion, garlic and peppers... Yumm, eat it with rice and grilled tuna, the best!!!
