To bring back a very old post, however this still popped up in the google search for the secret gravy mix.
Chances are you are never going to duplicate it exactly no matter but I always look for ideas. I made a gravy tonight that my wife liked better than Jollibee. Its pretty basic but does come out very well.
For the stock, take your giblets and neck from your chicken (you can use chicken broth if you dont have any but not as good. Boil this with garlic, onion, and celery for about an hour. To this I add some chicken bullion, and pepper. Strain it and you have a very good broth.
Then make a Roux.
This is basically flour mixed with an oil. If your lucky enough to have your chicken drippings use that...the oil. If not use butter. Most people use the following formula but I like to use a little more butter or oil.
2 Tablespoons Oil/Butter to 2 Tablespoons Flour to 1 cup of liquid stock (I use 2 tablespoons of the oil/butter)
Over Medium High heat cook the oil/butter and the flour until it darkens while stiring constantly.
Slowly add the liquid to the Roux while stiring. Salt and Pepper as needed, but the bullion I find adds plenty of salt. I also add a little gravy Master, which might be a little hard to find depending where you are.

I'm in the Philippines now and gosh, I eat at Jollibee almost everyday. I just can't get enough of it. Love their fried chicken and spaghetti.
